🌟 High-Protein Gingerbread Loaf

Featuring Wellious  Unflavored & Unsweetened Protein

Ingredients

  • 1 ⅓ cup gluten-free flour

  • ⅔ cup Wellious Unflavored & Unsweetened

  • 6 tbsp brown sugar or brown sugar alternative

  • 1 tsp baking soda

  • ½ tsp salt

  • 2 tsp ground ginger

  • 1 tsp cinnamon

  • 1 cup unsweetened applesauce

  • ¼ cup molasses

  • ½ cup egg whites

  • 1–2 tbsp non-dairy milk, only if batter is too thick

Lightened-Up Gingerbread Glaze

  • 2 tbsp Greek yogurt (vanilla or plain)

  • 1–2 tbsp powdered sweetener (monkfruit works best)

  • ½ tsp vanilla

  • 1–2 tsp almond milk (only if needed to thin)

  • Optional: pinch cinnamon or ginger

How to Make It

  1. Preheat oven to 350°F. Line a loaf pan with parchment.

  2. In a large bowl, whisk flour, protein, brown sugar, baking soda, salt, ginger, and cinnamon.

  3. In a separate bowl, mix applesauce, molasses, and egg whites.

  4. Add wet to dry; fold gently.

  5. If batter is very thick, add 1–2 tbsp non-dairy milk. It should be thick but pourable.

  6. Pour into loaf pan and smooth the top.

  7. Bake 38–45 minutes, until a toothpick comes out clean.

  8. Cool fully before slicing (yes, it’s worth the wait).

  9. For the glaze: stir together yogurt, powdered sweetener, and vanilla. Thin with milk as needed and drizzle on top.

How to Keep the Gingerbread Flavor Strong

Unflavored protein can mute spices, but a few tweaks bring everything roaring back:

  • Double the ginger — at least 2 teaspoons.

  • Keep the molasses for depth, warmth, and that classic gingerbread color.

  • Cinnamon + a pinch of clove if a holiday-forward flavor is the goal.

  • ½–1 tsp vanilla adds roundness and warmth.

💡 Baking Tips, Swaps & Nutrition Notes

Texture Tips

  • Applesauce keeps moisture levels high without extra oil.

  • Molasses adds a tender chew and helps the loaf brown beautifully.

  • Don’t overmix — gentle folds = the softest crumb.

Ingredient Swaps

  • Flour: Use regular all-purpose or a 1:1 gluten-free blend.

  • Sweetener: Brown sugar alternative holds structure better than liquid sweeteners.

  • Egg-Free: Replace egg whites with 2 flax eggs, but expect a slightly denser loaf.

Why It’s a Healthy Dessert

This loaf packs plant-based protein, cozy spices, and naturally sweet molasses while staying light and snackable. It’s the kind of bake that fits perfectly into a balanced, feel-good routine.
